Thai Kitchen Curry Challenge
I sure have talked about recipes and cooking a lot lately, but it is just so easy to talk about it and this time of year I really love experimenting and introducing more things to my family. Recently I had heard about the Thai Kitchen Curry Challenge and when asked to participate, I was more than ready!
I went by the basic recipe that was included in my Thai Kitchen Curry Kit but the minute it was completed I realized that there was so much more I could add. However, I wanted to go by the recipe and while it does taste amazing the way it is I see it as a great starting point to add and experiment with! I can see me tossing in a few water chestnuts, broccoli, sugar snap peas and things like that. My husband is a fan of spicy stuff and absolutely loved this! He said that this recipes tastes just as good as what the would had gotten at the Thai restaurant.
Here is the recipe that was included in my Thai Kitchen Curry kit.
Prep Time: 10 minutes
Cook Time: 15 minutes
1 can (14ounces) Thai Kitchen Coconut Milk, divided
2 Tablespoons Thai Kitchen Red Curry Paste
1 Tablespoon brown sugar (I used the Splenda brown sugar)
1 pound cooked boneless, skinless chicken breasts (I am going to try tofu next time)
1/4 cup chopped fresh Thai Basil
1 Tablespoons Thai Kitchen Premium Fish Sauce
1. Bring 1/2 of the coconut milk to simmer in large skillet on medium heat. Stir in curry paste until well blended. Add remaining coconut milk and sugar; bring to boil. Reduce heat to low; simmer 5 minutes.
2. Stir in chicken. Cook 3 to 5 minutes or until chicken is heated through. Stir in basil and fish sauce.
3. Serve with cooked Thai Kitchen Jasmine Rice. Garnish with additional basil and red chile slices, if desired.
Makes 4 servings.
This recipe was so easy! I put the rice on to start cooking right before I started cooking the chicken and everything was completed right about the same time. I also wanted to say that I know there are different brands of coconut milk out there, but in my personal experience over the past few years, Thai Kitchen really is the best. I only purchase other brands if I am unable to locate Thai Kitchen.
